Food and Drink and Tourism at Bournemouth University

Academics at Bournemouth University and its predecessors have always had an interest in Food and Drink. Today the main focus for this work is the University’s Department of Tourism and Hospitality, with a team of 35 academic staff and over 1,000 undergraduate, postgraduate and doctoral students, making it one of the biggest and most prolific departments of its type in the world. Aspects of food and drink are studied in a wide range of contexts.ITT4

Currently Professor Heather Hartwell is leading a pan European project that aims to promote vegetable consumption among adolescents and the elderly. VeggiEAT is an industry-academic partnership led by the University, with European academic and industrial partners. The project is aimed at producing answers, amongst others, to that old question of how we get the kids to eat their greens. Dr Sean Beer is leading research on the authenticity of food. Authenticity is an important idea in that there is often a price premium for products that are labelled authentic; but what does the word authentic mean. Sean’s research with people living in Dorset has produced some surprising answers in a world where so few people actually cook, and eat with their friends and families. Both the Heather and Sean’s work featured in this year’s very successful FoodBIZ conference, which brought together industry and academics to share findings from research and take ideas forward within the areas of food, health and wellbeing.

seanMuch of the University’s food and drink teaching and research takes place within the broader context of the tourism and hospitality industries. Here Bournemouth academics work closely with key academic and industry professional bodies, for example hosting the Annual Hospitality Student Conference in London supported by speakers from companies such as Marriott International, Red Carnation Hotels, the Shangri-La Hotel, the Institute of Hospitality Management, Accor International, InterContinental Hotels and Whitbread Premier Inn. Bournemouth graduates develop the capacity to be involved in the more analytical, developmental and strategic perspectives of the food industries and develop insights into the issues affecting these industries through access to things such as visiting speakers from Hilton International, Fairmont Hotels, Le Manoir aux Quat’Saisons and many more.

They are proud of industry collaborations that enable them to cocreate best professional practice through constant interaction and engagement. As Head of Department Professor Dimitrios Buhalis indicated, “We are privileged to work in Bournemouth and Poole, a living tourism and hospitality lab as well as to work with local food companies. This enables our research and teaching to have great relevance and impact in the global marketplace as well as in Dorset and the South West England.”

The Annual Coastal Tourism Forum Shore Potential: Addressing the Coastal Tourism Challenge featuring a line-up of top industry speakers, politicians and business leaders. This promises to be a stimulating and ground-breaking day for everyone involved in coastal tourism. Coastal Communities Minister Andrew Percy MP will present the keynote address, on a day packed with seminars, debates and new research leading up to the creation of a Vision for tourism on the coast. Sally Balcombe, Chief Executive of VisitBritain, Brigid Simmonds OBE, Chief Executive of the British Beer and Pub Association, and the New Economics Foundation’s expert on Coastal and Marine Environment, Fernanda Balata, will start the day looking at the big picture and providing insights into the current status of tourism and the coast. The latest research on coastal tourism will be presented by independent research companies BDRC Continental and One Minute to Midnight, covering the opportunities for growth on the coast in the off-peak period.

We have a very limited number of volunteer opportunities for our students who will help NCTA to operate the conference, from registrations, hosting the conference, helping speakers and supporting the organisers. NCTA will cover coach travel expenses for the day.

From St James Park
Leave the station via the Broadway exit and head down Tothill Street. When you reach the end, you will see Westminster Abbey. Cross over the road towards the Abbey. On your right you will see a small archway, go through the archway into Dean Yard and head towards the large building facing you at the end of the yard – Church House.

From Westminster
Leave the station via exit 4, turn right and walk to the first set of traffic lights on your left. Cross the road going towards the Houses of Parliament. Go straight ahead past the Houses of Parliament until you reach the next set of pedestrian lights. Turn right and walk past Westminster Abbey. At the end of the Abbey you will see a small archway on your left with a security cabin to the side. Go through the archway into Dean’s Yard. Church House is the large building facing you at the end.

From Victoria
Leave the station by the front door entrance. Cross the first road on the right (Vauxhall Bridge Road) and walk straight down Victoria Street for approximately 15 minutes until you reach Westminster Abbey. Standing in front of the Abbey , you will see a small archway. Go through the archway in to Dean’s Yard and head towards the large building facing you at the end of the yard- this is Church House

PhD student, Sarah Price won the best PhD student paper award in the EuroCHRIE 2016

priceso #BUProud of our PhD student, Sarah Price, who was first shortlisted as a finalist and then, despite a strong international competition, won the best PhD student paper award in the EuroCHRIE 2016, sponsored by The Emirates Academy of Hospitality Management and Emerald/IJCHM. Her paper is entitled: FoodSMART – a tool for wellbeing?
She will be awarded in in the coming EuroCHRIE2016 conference in Budapest.

Professor Dimitrios Buhalis Head of Department of Tourism and Hospitality at Bournemouth University was invited to the University of Pretoria to deliver a keynote speech on Universal Accessibility for Tourism and meets the South Africa Minister of Tourism Derek Hanekom.

 

The Department of Tourism and Hospitality, Bournemouth University is a partner with the University of Pretoria, one of the oldest and most established Universities in South Africa. Professor Buhalis had discussions with the Head of Department of Tourism Professor Berendien Lubbe and her colleagues about research partnerships that will cover a number of areas including eTourism, Accessibility, destination management and marketing, and wildlife tourism.

During the Tourism Symposium Professor Buhalis had the opportunity to reflect on Accessibility as welcoming all everywhere any time and he explored several global best practice examples in accessible tourism. He contributed to the Symposium that included a range of important South African and global operators including SANparks, Sun International, Tourvest and SATSA.

Professor Buhalis had the opportunity to meet the Minister of Tourism of South Africa RH Derek Hanekom  and to discuss accessibility issues as well as the marketing of South Africa as a destination and global issues such as Brexit, political uncertainty and emerging markets and how they can contribute to tourism and economic development.

The Long Haul

When I graduated May 2015 with my undergrad degree so many emotions and worries were going through my head. I had a friend tell me as we were waiting to walk out to our graduation ceremony, “Lauren you don’t look so happy right now.” It wasn’t that I was unhappy, I was just worried about my future.

Flash forward.

It is now August 22nd, 2016 and I couldn’t be happier with the path I’ve chosen to take. I landed a job as an assistant manager for the clothing company Hollister it wasn’t what I expected it to be at ALL but I made many friends there and also learned so much. I traveled to the Philippines, Yosemite, Laguna Beach, Scotland, Disneyland, Malibu and more!

  
 
I also was accepted to study at Bournemouth University in September! I will be studying MSc in International Hospitality and Tourism Management. Moving for my MSc probably won’t be what I expect it to be but I’ve always liked surprises.

The World Tourism Day aims to raise awareness on the role of tourism within the international community and to demonstrate how it affects social, cultural, political and economic values worldwide. Since 1980, the United Nations World Tourism Organization has celebrated World Tourism Day on September 27. Bournemouth University’s Department of Tourism and Hospitality will celebrate United Nations World Tourism Day (WTD) on Tuesday 27th September in an event that highlights research and best practice in making tourism more accessible. Tourism for All – Promoting Universal Accessibility’ is the theme of WTD 2016. In keeping with this, the University is bringing together the Family Holiday Association (FHA), National Coastal Tourism Academy (NCTA) and Bournemouth Tourism along with our students.

The event will review cutting edge research and best practice in making tourism more accessible. It will identify opportunities for strategic collaborative working between academics and practitioners in public, private and voluntary sectors with interests in making tourism more accessible. We will also explore how tourism students can engage with voluntary activity in support of initiatives to make tourism more accessible.  The programme will include presentations and discussions of research from University staff including Professor Dimitrios Buhalis, Professor Stephen Page on how tourism can be made more accessible for people suffering from dementia and their carers, Dr Philip Alford and Dr Philip Long on how tourism can be made more accessible for families who are socially and economically disadvantaged.

“Tourism for all!”

Tourism has experienced a revolution in the past 50 years. In 1950 there were 25 million international tourists; today there are around 1.2 billion people travelling the world. Travelling has become a huge part of many lives. When travelling, we come across new people, new sights, and new ideas. Often our perception of the world changes as we see more of it. However, we must not forget that for many, travelling can be quite a difficult process. 15% of the world’s population is estimated to live with some form of disability. That is 1 billion people around the world who may be unable to enjoy the privilege of knowing other cultures, experience nature at its fullest and experience the thrill of embarking on a journey to explore new sights.

Accessibility for all should be at the center of tourism policies and business strategies not only as a human right, but also as a great market opportunity. With the world’s population ageing, all of us will benefit sooner or later from universal accessibility in tourism.  As we celebrate World Tourism Day, let us recall that all of the world’s citizens have the right to experience the incredible diversity this planet has to offer. We thus urge all countries and destinations, as well as the industry, to promote accessibility for all in the physical environment, in transport systems, in public facilities and services and in information and communications channels.

I wish you a very happy World Tourism Day and a future full of enriching and compelling travel experiences to be enjoyed by all.

News from Vietmam: Phuong Phung graduated in 2010 with a MSc in Tourism Management and Marketing

Phongphoto for BUBournemouth University has left a long lasting impact to my life. I studied on the MSc in Tourism Management & Marketing course and graduated in 2010. After graduation I returned to Vietnam and I am currently working as  a Lecturer in tourism marketing at Hong Bang International University. I am also the co-founder of Sunaca.com and a partner in other projects, including brand consulting for international export.

The MSc degree opened up many opportunities and allowed me to do what I’m doing now. The  course was an extraordinary experience. The course enabled me to gain many insights into marketing, tourism and Information Communicate Technology. All the lecturers are very good, knowledgable, helpful and supportive. But I think it’s the change in mindset that has helped me the most.

During my time at Bournemouth I was involved with many extra-curricular activities while studying, and in particular I helped out with the photography for some seminars and photographs for a charitable event.
I had a great time and learned a lot from the interesting and diverse people that I met. My BU experience was an awesome experience. The school is great, Bournemouth is the ideal place for me. A truly valuable experience.

Recent graduates looking for work should just stay true to your passion and interests, but be prepared to do other kinds of work to survive until you can work in your dream job or business. Networking is important.
