Professor Heather HartwellProfessor Heather Hartwell

Dr Heather Hartwell, Professor of Foodservice and Applied Nutrition Bournemouth University, is a registered nutritionist and a member of the Nutrition Society. Post Doc research has included evaluation of the opportunity for healthy eating in prisons for the National Audit Office, UK and evaluation of the ‘steamplicity’ food production system operating in Charing Cross Hospital, London for Medirest. Her expertise is within the academic discipline of ‘eating out’ and she is editor of the highly acclaimed Perspectives in Public Health, a peer reviewed practice based journal, published by Sage.

 

KAProfessor Katherine Appleton

I graduated from the University of Southampton in 1993 with a BSc (Hons) in Psychology, and from the University of Leeds in 1998 with a PhD in Biological Psychology / Nutrition. Since, I have worked as a Research Fellow at the University of Leeds (1999), University of Surrey (2000-2002), University of Bristol (2002-2005) and as a lecturer at Queen’s Unviersity Belfast (2005-2012). I joined Bournemouth Unviersity in Sept. 2012, following a year long sabbatical at the University of Iowa, US. I am a Chartered Psychologist (British Psychological Society, 2001) and a Registered Nutritionist (Nutrition Society, 2001).

Dr Jeff Bray

After a career in Retail Store and Project Management Dr Jeff Bray joined Bournemouth University as a lecturer in Marketing and Consumer Behaviour in 2004, he now holds the post of Principle Academic and Waitrose Fellow of Retail Marketing.  Jeff’s research is all focused around Consumer Behaviour and he has worked on a range of funded projects with a particular focus on applied, industry based research.

Sarah Price

Sarah Price

I am an Associate Nutritionist and after my undergraduate and postgraduate studies have been given the opportunity to continue my studies at Bournemouth University. Having gained insights into both clinical and industry roles of Nutritionists I have discovered that my interest lies within the role of Nutrition in the foodservice industry. My research is critically evaluating criteria of importance that consumer attach to food establishing confidence and trust in public sector foodservice.  

 

Carmen Martins

Carmen Martins holds a Master in Marketing and Advertising from Universidade Fernando Pessoa, Portugal  and she is now a researcher assistant and PhD student at Bournemouth University (Faculty of Management). Her research interests are tourism, hospitality, and innovation. For the purpose of FoodSMART project Carmen’s role focus on Project Administrator and Marketing Communications.

 

 

Natalia Lavrushkina

Natalia Lavrushkina is a research assistant within the Faculty of Management, Bournemouth University. She has a MSc in Tourism Management and Marketing (Distinction) from Bournemouth University and is an EdD student with the Southampton Education School, University of Southampton, researching Social Networks of a Research Community. She has previously been a Post Graduate Taught academic administrator and joined the FoodSMART project as a research assistant to manage it to completion.

F.J. Armando Perez-Cueto is Associate Professor of Consumer and Sensory Science at Copenhagen Universiyt. Between February 2012 and October 2014 he was the Associate Professor of Public Health Nutrition at Aalborg Universitet’s Campus in Copenhagen, Denmark. He has been visiting lecturer at the Faculty of Food and Nutrition Sciences (FCNAUP) of Porto University yearly since 2011. During his career he was part of several EU Funded projects, namely, DAFNE (Data Food Networking), EATWELL, Q-PorkChains, ProSafeBeef. Currently, he is Work Package leader of the VeggiEAT Project (IAPP-Marie Curie/EU grant agreement # 612326), member of the Sino-Nordic Network Food4Growth (Nordic Council of Ministers), and principal investigator of the Danish-Brazilian Network ELIGEBIEN (Danish Ministry of Education and Innovation Funds).

Originally a Food Engineer from UNIVALLE, Bolivia, he received his postgraduate qualifications from Ghent University, namely a PhD in Applied Biological Sciences, a MSc in Rural Development Economics, and a Diploma in Food Science & Nutrition. He has consolidated a multi-disciplinary research approach around different aspects of food and health, including postdoctoral work combining nutrition and consumer research. Presently, the focus of his research is on the role that choice architecture (nudging) could play in Public Health Nutrition.

He is author of 46 original articles, co-editor of 1 book, and member of the Editorial Boards of Nutricion Hospitalaria (Comité Editorial Iberoamericano), Revista Chilena de Nutrición and Perspectives in Public Health. He enjoys sharing conversations and interchange of ideas with young researchers and students.

Dr Agnès Giboreau

Agnès Giboreau is the head manager of the Research of the Institut Paul Bocuse. Agnès Giboreau has a PhD in Food science and a MSc in Cognitive psychology. She is habilitated for research supervision from the University of Lyon in Neurosciences and Cognition.Her research activity aims at better understanding the pleasure of eating and its relation to health from both perceptual and behavioural perspectives. Projects focus on meal experience in a multidisciplinary approach and rely on studies conducted in real situations. This is done through the unique facilities of the Experimental restaurant, a Living Lab (labelled Enoll) where professional experts work together with scientists, contributing to food design and production as well as table design and service. Results are published in peer-reviewed journals and conferences and are communicated to the food service and hospitality sectors through training of the future professionals as well as specific cooperative programs. Agnes Giboreau conducts her works as an associated researcher of Lyon University (Pr. A. LaureDr Laure Saulais

Laure Saulais has a MSc. in Food and Life Science Engineering and Environmental Economics from AgroParistech University, and a PhD in Economics from Grenoble University. She was a postdoctoral researcher in the Agricultural Economics Department at Laval University, Quebec City (Canada) before joining the Institut Paul Bocuse Research Centre in September 2009, where she is now a researcher. She is also an associate researcher at the French National Institute for Agricultural Research (INRA) in Grenoble, France. Her research, in the fields of Behavioral Economics and Public Health, focuses on the study of consumer food choice behaviors in away-from-home eating contexts. She also teaches MSc-level courses in Consumer Behavior and Public Health at the Institut Paul Bocuse, and occasionally teaches courses in other French universities and engineering schools.

IoannisDr Ioannis Mavridis

Dr. Ioannis Mavridis is an Associate Professor of Information Systems Security at the Department of Applied Informatics of University of Macedonia, Greece. He has published over 100 articles in international and national scientific journals and conferences, mainly on applied informatics and information security related topics. He has founded and leads the Information Security (InfoSec) research group of the Multimedia, Security & Networking laboratory (MSN lab) at the University of Macedonia, Greece (http://infosec.uom.gr). He has participated in more than 15 international and national funded R&D projects.

 

Dr. Panagiotis Fouliras

Dr. Panagiotis Fouliras is an Assistant Professor of Computer Networks at the Department of Applied Informatics, University of Macedonia, Greece. He has published over 40 articles in international and national scientific journals and conferences, mainly on applied informatics and computer networks related topics. He has participated in more than 10 international and national funded R&D projects. He is a member of the InfoSec research group of the MSN lab at the University of Macedonia, Greece (http://infosec.uom.gr).

 

Nikolaos Tsigganos

Nikolaos Tsigganos has received his Bachelor’s degree in Computer Science, and Master’s degree in Engineering of Mobile and Pervasive Computing Systems. He has professional experience as a Software Engineer and Network Administrator and since 2000 he is working as an IT Manager in Makedonia TV SA, Greece. He has participated in a number of European research programs. Currently he is a PhD student of the Department of Applied Informatics and a member of the InfoSec research group of the MSN lab at the University of Macedonia, Greece (http://infosec.uom.gr).

 

Stavros Salonikias

Stavros Salonikias has a Bachelor in Computer Science, MSc in Applied Informatics and MSc in Engineering of Mobile and Pervasive Computing Systems. He has been working in the private sector for about 20 years as system analyst, pre-sales engineer and consultant. Currently he is a PhD student of the Department of Applied Informatics and a member of the InfoSec research group of the MSN lab at the University of Macedonia, Greece (http://infosec.uom.gr).

Manfred Ronge is the managing director of Ronge & Partner and has more than 30 years of experience in the catering and food production sector. Before establishing Ronge & Partner, Manfred Ronge was managing director of Austria´s largest catering company with more than 150 individual businesses and the daily food delivery for over 80.000 people from different segments, such as kindergartens, businesses, as well as the health and care sector. In the year 2013, Ronge & Partner enlarged his capabilities by overtaking the company “Stria”, which is Austria´s most renowned kitchen design business. Together both companies have various references in the hotel sector, but also in the field of restaurants and public sector catering.

Rebecca Nierer AusschnittRebecca Coolen

Rebecca Coolen graduated from the Stenden University in Leeuwarden (the Netherlands) in 2009 with a BSc in Tourism Management and two years later with a Master of Administration in Service and Retail Management. Since 2011, she works as a project leader at Ronge & Partner and deals with various projects, such as health promotion ventures (focus on nutritional themes), bidding procedures and administrative project work.

 

Karin KvardaKarin Kvarda

Karin Kvarda is responsible for most of Ronge & Partner’s health promotion projects. She finished her studies (nutrition and communication) at the University of Vienna in 2012 and started working for Ronge & Partner immediately afterwards. As nutritionist, she manages various projects in the health sector, such as providing information about the allergen regulation for tourism and catering companies, drafting and organising workshops for children in schools and kindergartens, as well as for parents and educational staff, and guiding hospital and school kitchens through implementing a healthy diet
